            Yesterday the snow took my joy. It left me feeling contained and trapped, even more than I sometimes do in the late-stage pandemic. Today, I vowed to not let that happen.
When we came inside, Thistle shook off the wet flakes, making a mess in the entryway, and I set about making a mess of my own in the kitchen.
What came of it were these Snow Day Biscuits. Flaky, tender, and so. damn. buttery.

      The Leftovers- Lemon Blueberry Bundt Cake
      
        
          
            We had the honor of hosting a crew from Cedar Rapids Tourism for a socially distanced brunch photo shoot to be featured in an upcoming inclusivity campaign. It was wonderful to have some sense of our normal routine returning- enjoying a meal in the garden, chatting over coffee. But it was even more reassuring to know that our mission is seen by people, even when we aren’t business as usual.
We made more food than could fit on the table and relished in every single second. Lemon Blueberry Bundt Cake was the star of the show. It is dense, sweet but not too sweet and perfect to pair with coffee and conversation.

      The Leftovers- TS to go Oatmeal Cream Pies
      
        
          
            Let me just tell you, there is NOTHING quite as satisfying as a homemade oatmeal cream pie. I am not sure exactly what it is. Perhaps it is the soft, slightly spicy salty cookie or the way the marshmallow cream filling has just the right squish. These are eyes rolling in the back of your head, eat three for breakfast, and still want another good.

            We missed feeding people. We missed bringing joy to folx and most of all, we missed sharing Thistle’s Summit with you. We know it isn’t safe (everyone please wear a fucking mask) for people to travel to us, but we still wanted to be able to connect people with honest food and little luxuries in a time that feels monotonous.
